Yellow tea
Yellow tea is one of the most unique and rare teas in traditional Chinese tea culture, known for its subtle flavour profile and complex manufacturing process. With roots in Imperial China, yellow tea is considered an exclusive beverage, particularly sought after for its unique flavour nuances and mild character that combines sweetness and a slight earthy note. What makes yellow tea unique is its special oxidation process, which differs from other teas such as green and black tea. Its production is a slow and meticulous process that requires the harvested leaves to undergo a gentle oxidation process in a controlled environment. The leaves are steamed and slowly dried to reduce bitterness and bring out a smoother, fuller flavour. This method, called "men huang" (封黃), involves covering the leaves and steaming them to develop their golden hues and characteristic flavour.
