Yellow tea is one of the most unique and rare teas in traditional Chinese tea culture, known for its subtle flavor profile and complex manufacturing process. With roots in Imperial China, yellow tea is considered an exclusive beverage, particularly sought after for its unique flavor nuances and mild character that combines sweetness and a slight earthy tone. What makes yellow tea unique is its special oxidation process, which is different from other teas such as green and black tea. The production is a slow and meticulous process that requires the harvested leaves to undergo a gentle oxidation process in a controlled environment. The leaves are slowly steamed and dried to reduce bitterness and highlight a smoother, fuller flavor. This method, called “men huang” (封黃), involves covering and steaming the leaves, which develops their golden hues and their characteristic flavor.
