The Phoenix Mountains in northern Guangdong are home to some of the world's most unusual and exclusive teas, with a long history dating back to the Song Dynasty. Scattered along the alternating sunny and mist-swept slopes, cliffs and precipices, young and old tea bushes and trees grow to produce teas with unique aroma and flavour profiles. There are a large number of subspecies in the area and teas are categorised by subspecies, aroma type and sometimes by mother tree. This means that different subspecies can be used to produce a tea belonging to a flavour type.
Song Zhong can be translated as seeds from Song and gives us an idea of the history of tea in the area. Legend has it that tea began to be cultivated in the area as early as the Song Dynasty, which may well be true, although the teas of that time were very different from the dancong oolongs of today. This tea has been handled with great care to bring out the elegant fruity notes, a soft honey sweetness and a long, aromatic aftertaste that lingers in the mouth and throat.
