Chai is a drink with roots in Indian culture. The word 'chai' simply means 'tea' in Hindi, but for many people it refers to a specific type of tea - a spicy, aromatic and rich brew that combines black tea leaves with a variety of spices. The most common spices in chai include cardamom, cinnamon, ginger, cloves and black pepper. Each region and family often has its own variation, making chai a multifaceted drink. The basis of chai is usually black tea, often from the Assam region of India, which provides a robust flavour that manages to balance the strong spices.
