Shui Xian, also known as Water Sprite, is a rare tea grown in Taiwan and can be difficult to obtain due to the small harvests and insect infestations. Shui Xian has a full-bodied character with a light floral note and a nice depth. Award-winning grower Mr. Chang practices sustainable agriculture, using neither pesticides nor artificial fertilisers. All work, from weeding and harvesting to processing, is done by hand. Mr. Chang's tea is more oxidised than other farmers', giving it a rounder taste and aroma.
